Tartiflette Recipe with Vacherin



2 1/2 lb of potatoes, peeled – 1/2 lb slab of bacon, cut and diced – 1 medium onion, thinly sliced – 1 clove of garlic – 3/4 cup of dry white wine – Salt – Pepper – 1 1b of Vacherin

  1. Bring potatoes to a boil for 20 minutes. Drain and then slice and dice.
  2. Cook bacon in skillet until brown. Remove. Leave 1 table spoon of fat in skillet and then cook onions and minced garlic for five minutes until golden brown. At that point add bacon and wine. Cook for another 5 minutes. Add potatoes to the mixture and season with salt and pepper.
  3. Place 1/2 portion from skillet into an ovenproof baking dish. Lay 1/2 of the cheese (sliced) on top of it. Place other 1/2 of potato mixture on top of cheese. Top with remainder of cheese slices. Bake at 350 F for 20 minutes until golden brown and bubbling.
