Comtomme
from La Station de Compton in Quebec
Comtomme, produced from the organic milk of cows, is a mild, yet complex and interesting cheese with aroma of apples and butter. While the texture is smooth, it melts quickly and is not sticky. This cheese is excellent served on a platter or used in a raclette. Pairs beautifully with a strong cider or a lightly woody Cabernet Merlot.
Five Brothers
from Gunn’s Hill Artisan Cheese in Ontario
This cow’s milk cheese combines traits from Gouda and another Swiss variety called Appenzeller. It has a creamy and rich flavor with sweet overtones. Pairs well with Chardonnay, Sauvignon Blanc, and Pilsner beers.
