Lucy’s Recipe

Apple, Beetroot, Goat Cheese and Walnut Salad

This roasted beetroot, apple, walnut and goats cheese salad is the most delicious salad and for us it really is Autumn on a plate. They finished the salad with a good drizzle of their Original French.


4 medium beetroots, cut into 1 cm wedges

1 tbsp olive oil

1 1/4 cups Chicory, trimmed and leaves separated

1/4 cup Arugula

2 red apples, thinly sliced

2 tbsp chives roughly chopped

1/2 cup goat’s cheese

1/3 cup walnuts, lightly toasted

Lucy’s Original French Dressing


  1. Preheat the oven to 400F.
  2. Put the beetroot on a baking sheet lined with baking parchment and toss with the olive oil. Season and roast for 30 -35 minutes, turning once, until tender and slightly charred around the edges. Allow to cool.
  3. Place the salad leaves on a large shallow plate. Top with the beetroot, apples , walnuts, chives and crumble over the goats cheese. Drizzle generous with the dressing.

Herma’s Cheese Shop

Goat Cheese Soaked in Red Wine

We are excited to introduce this Spanish goat’s milk cheese soaked in red wine as we believe it would be lovely served on a plate of tapas alongside Spanish Chorizo, almonds and olives (all found at Herma’s). The purple rind comes from bathing the cheese in red wine, which gives the cheese a mellow, yet sharp, tangy and fruity flavor. This goat’s milk cheese would also be lovely in a grilled cheese sandwich, appetizers or sprinkled over a salad like in the recipe shared above. Enjoy with a fruity red wine before or after dinner.

Another cheese of special mention…Truly Grass Fed Mature Cheddar and Medium Cheddar from Ireland. 95% of the cow’s diet comes from eating a natural diet of grass.
