Discovering new flavours and how they may compliment each other is an exciting journey, and when done with success, can be made into creations worthy to be considered a work of art. What better way to fill your culinary palette than with a visit to Herma’s. This week our interest lies with truffles and how they enhance and elevate foods with a unique earthy and delicious flavour.

A Culinary Journey with Truffles

Just one whiff of the intense aroma that comes from truffles will have you salivating for the rich flavours sourced from this sought-after, foraged, edible, subterranean fungus – a rare delicacy. Find a large assortment of truffle products at Herma’s that will allow you to experiment and create like never before.

Enjoying Truffles this Summer

Truffle Hunter’s Black and White Truffle Oil incorporates some of the highest quality truffles – shaved and expertly blended with cold-pressed extra virgin olive oil.

Asparagus and Poached Egg

with fresh Parmigiano and Truffle Oil.

All you need to do is blanch your asparagus in salted water for 2 minutes and poach your eggs. To serve, simply lay the eggs on top of the asparagus and sprinkle according to taste with fresh grated parmesan and a drizzle of aromatic truffle oil.

Corn on the Cob

with Truffle and fresh Parmigiano

After preparing your corn (6 ears), baste with a mouth-watering mixture of garlic (3 cloves), 4 tablespoons of olive oil and 2 tablespoons of lemon juice, transfer to your serving plate and sprinkle corn with about 1/2 a cup of finely grated Parmigiana. Before serving, drizzle with 4-5 tablespoons of White Truffle Oil.

Steak Sauce

with Saint Agur Blue Cheese and Truffle Oil

Combine 1/2 cup of St. Agur Blue Cheese, 1 clove of garlic (minced) and 1-2 tablespoons of truffle oil. Heat over the stove or in microwave (30 seconds to 1 minute). Blend 1/2 a cup of Mayonnaise and a smidgen of salt into the mixture.

Mushroom Ravioli Sauce

Combine 4 cups of heavy cream and 4 teaspoons of black truffle oil in a saucepan over high heat. Bring to a boil. Stir in 1 cup of grated Parmesan cheese and 4 teaspoons of butter. Salt and pepper to taste. Cook, stirring frequently, until the sauce has a creamy consistency, about 5 minutes.

Roasted Potatoes

with Onions, Truffle Oil and Parmigiano

Pre-heat oven for roasting at 400 F.  Combine sliced potatoes, thinly sliced onion (1 yellow), garlic, olive oil, salt and pepper on a baking sheet or baking dish. Toss potatoes until they are evenly coated. Roast for 40 minutes. Place potatoes on a serving dish and drizzle with truffle oil.

Truffle Salt – Another truffle favourite!

Also try roasted vegetables with truffle salt as a finishing touch to foods like brussel sprouts, French fries, broccoli and popcorn. To cook veggies, place on a baking sheet, add olive oil and truffle salt. Roast to perfection.

Romancing with Rummo

The drawn-out process of coaxing wheat and water into a miraculously elastic union has been the practice of Rummo pasta-makers for 175 years. Choosing just the right ingredients and testing the pasta to make sure that each batch meets Rummo’s high standards guarantees that Rummo will continue to gain the respect of Italians everywhere, whose deep love for pasta demands excellence. Below is a refreshing summer pasta recipe of theirs that will be sure to delight.

Linguini with Lemon Recipe

INGREDIENTS

FOR 4 PEOPLE

360 g Rummo Linguine – 3 organic lemons, juice and zest – 1-3 anchovy fillets – 1 clove garlic – salt and pepper to taste – sprig of mint – 45 ml extra virgin olive oil

DIRECTIONS

Sauté garlic in olive oil. Add the anchovy and sauté until it begins to break up. Add lemon juice. Bring water to a boil in an ample pot and add salt. Cook the Linguine for 10 minutes. Drain the pasta and toss well with the sauce in the pan. Sprinkle with mint and lemon zest to taste. Toss and serve.
