Cheese Department

Summer is just around the corner and we are already experiencing weather that is perfect for entertaining outdoors.

Let’s face it, artisan cheese is best enjoyed al fresco. We consider the enjoyment of artisan cheese, charcuterie, and fruit outdoors on beautiful sunny days to truly be what the Italians consider la dolce vita – the sweet life.

To ensure you enjoy yourself outdoors with cheese this summer, Cathy and Margaret have planned an exciting new event in which they will share ideas and offer samples.

Burrata with Speck, Peas and Mint Recipe

Ingredients

1/3 Cup Fresh or Frozen Baby Peas*

1/4 Cup Packed Finely Shredded Mint Leaves

1 1/2 Teaspoons Fresh Lemon Juice

3 Tablespoons Extra-Virgin Olive Oil*

1/4 Cup Freshly Grated Parmigiano-Reggiano Cheese, plus more for sprinkling*

Kosher Salt and Freshly Ground Pepper*

8 Thin Slices of Speck (about 2 oz)*

6 oz Burrata Cheese, cut into 4 pieces*

Burrata is a soft, fresh Italian cheese that is a mix of mozzarella and cream.

Directions

Step 1 – In a small pot of salted boiling water, cook the peas until tender. Drain and rinse under cold water; pat dry. In a medium bowl, toss peas with mint, lemon juice, olive oil and 1/4 cup of Parmigiana-Reggiano cheese. Season with salt and pepper.

Step 2 – Arrange 4 slices of the speck on each plate and top with 2 pieces of the burrata. Spoon the pea mixture over the burrata. Sprinkle with Parmigiano-Reggiano cheese and serve.
