Cooking with Cheese
3rd Saturday of each month, 11 a.m. to 3 p.m.
The Cheese Department invites you to take part in their new series of events which will involve a demonstration on how to cook with cheese.
This Saturday, January 21st, we are sampling a delicious, creamy gorgonzola sauce. Below is the recipe of the Gorgonzola Sauce to be sampled. Whether drizzled over pasta or filet mignon, it is sure to be a great Valentine’s Day hit!
Creamy Gorgonzola Sauce Recipe
4 cups of heavy cream
30 oz. crumbled gorgonzola
3 tblsp grated parmesan cheese
¾ tsp. black pepper
1/8 tsp. Nutmeg
green onions, chopped
Reduce cream over a slow simmer to about half.
This will take about 1 hour.
Add cheese, bit by bit, until melted.
Add green onions, chopped.
Serve over Filet Mignon, lamb, Veal or good quality pasta.
