Cheval Noir de L’Isle

The smooth semi-firm dough of this raw, cow’s milk cheese from Quebec has the pleasant smell of slightly tart fresh milk and undergrowth as it ages. In the mouth it reveals a melting texture with a taste of butter and hazelnut. Its edible, flamboyant, black rind has a flowery and ashy crust.

Moliterno aux Tartufo

Food writer Josh Ozersky once described truffles’ aroma as a combination of newly plowed soil, fall rain, burrowing earthworms, and the pungent memory of lost youth and old love affairs. What an apt description!

This pasteurized sheep’s milk from the Mediterranean island of Sardinia is aged for two months before being injected with ground black truffles that give the paste a bold, rich flavor and a striking veined appearance.

This fabulous truffle cheese is a showstopper on a cheese platter and absolutely delicious grated into scrambled eggs, shredded on top of a baked potato, crumbled on a juicy steak, placed on a white pizza and mixed into a mushroom risotto.

Rumor has it that Gordon is going to top his Vintage Pizza Pie, Prosciutto Truffle Honey, with Moliterno aux Tartufo for extra truffle punch. We’ll have to find out how he liked it.

Of course, I enjoy a slice all by itself with a nice glass of aged, red wine.
