Herma’s News – Beekman 1802 Special, Culinary Trip, French Cheeses and Savings in the Studio

Be like the bird who, pausing in her flight awhile on boughs too slight, feels them give way beneath her, and yet sings, knowing she hath wings. – Victor Hugo

Culinary Journey through Europe

Let us take you on a culinary journey through Europe with amazing foods imported from some of our favourite places – France, Spain, Italy, Greece and England.

From France…

For those of you that love the amazing cheeses from fromageries of France, this weekend at Herma’s is for you. Expected to arrive by the weekend are four cheeses that are some of our favourites.

St. Agur is an award-winning blue-veined, double cream, cow’s milk cheese from the village of Beauzac which is located in the mountainous French region of Auvergne. It has a unique combination of smooth, creamy texture with a salty and tangy taste. It melts and spreads easily and can be used as a dip for crunchy vegetables or in recipes. Pairs well with Chardonnay and Syrah and also fruits such as walnuts, pears and figs.

Brebirousse D’Argental is a creamy sheep’s milk cheese from Lyon, France that is much like brie. Buttery and sweet while also nutty and complex, it’s peachy, orange-colored rind is particularly attractive on a cheese tray.

Brie de Meaux is made just 50km east of Paris in the region of Ile-de-France. It has a long history which dates back to Emperor Charlemagne. In 1814 it was declared The King of Cheeses at a culinary tournament during the Congress of Vienna. With sweet and buttery flavours of mushrooms, truffles and almonds, this fabulous rich brie pairs perfectly with Champagne.

Roquefort is an amazing blue sheep’s milk cheese aged for at least 3 months in the limestone caves of Combalou in Southern France. Long ago Caesar’s centurions encountered Roquefort in the first century BC during their conquest of Gaul. It is delicious crumbled on a steak or enjoyed with dried fruits, honey, almonds, hazelnuts and walnuts. We particularly enjoy it in a poached pear and walnut salad. May be crumbled on salads or pasta. Lovely with an ale, stout or porter.

From Spain…

Ole! We love the spicy heat that Spain has to offer.

Food Suggestions from Spain…

Chorizo – Manchego Cheese – Queso de Oveja Diablo Sheep’s Milk Cheese – Hojiblanca Organic Extra Virgin Olive Oil – Origen Jams (Fig, Sweet Onion, Wild Berries, Peach and Cava Jam, Red Wine, Hot Chili Pepper, Rose Pedal) – Origen Almond Stuffed Olives – Hazlenuts with Chocolate – Handmade, Oven Roasted Cocktail Mix of Assorted Nuts  – Marcona Almonds with Salt and Paprika

From Italy…

Buon appetito! Italian Food Suggestions

We love fresh Parmigiano, like that just recently sliced and packaged by Harry pictured above, especially when it is grated over Italian pasta or a leafy green salad. Find an amazing selection of more than 25 types of Italian pasta from Rummo and Mamma Nuccia. Also available from Italy are all sorts of olives, anti-pasta items, tomato sauces, salami, Prosciutto DOP (sliced in the Cheese Shop or found in our coolers), olive oils, balsamic, artisanal breadsticks along with other cheeses.

From Greece…

Opa! We won’t smash any dishes, but we will celebrate life as we near the end of August.

From Greece find beautiful, handpicked olives and in our Cheese Shop fresh Feta PDO imported from Greece in one large block that Janis has been slicing and packaging herself. Really something very special!

From Jolly Old England…

We can’t say enough about the lovely crackers, toast and biscuits provided by the Fine Cheese Company of Bath, in the heart of the English West Country.

Their flavoured Crackers provide subtle new flavour pairings specifically for cheese (Chili, Basil, Chives, Fig & Honey, Rosemary, Walnut & Honey, Sea Salt), their Heritage range boasts fine versions of Britain’s most historic crackers and the All-Butter crackers are neutral, yet butter-rich for all cheeses.

Also find from England Red Fox’s Red Leicester Cheese and Wookey Hole’s Cave Aged Cheddar in our Cheese Shop.

Back home again…

Created in our very own kitchen on a weekly basis using only fresh ingredients.

Our Stilton Pâté is made with a fine Stilton which is blended with brandy, butter and other happy ingredients.

It is wonderful on its own eaten with a pumpernickel round or a cracker with the Garlic Box’s Cranberry Garlic Rum Preserve. Margaret suggests using a melon scooper to create a tiny round ball of stilton pate that may be placed on a juicy steak or hamburger. Melts beautifully.
