Camembert le Médaillon

This is an artisan raw cow’s milk cheese from Normandy, France. It has a runny, supple and smooth paste that delivers a buttery, creamy, sweet and floral flavour.

Serve Baked Camembert at Happy Hour

Baked Camembert makes a beautiful appetizer to share and can easily be prepared at home in just a matter of 20 minutes.

Instructions for one type of recipe…

1. Score the Rind (With a sharp knife create a deep cross or crosshatch pattern on top of the rind.) – 2. Top it Off (Drizzle with honey, add leaves of Rosemary sprig, sprinkle with just a few chili flakes and season with sea salt.) – 3. Bake (Use the wooden box that houses the cheese (remove plastic) or put in a cheese baking pot with lid. Bake in the oven at 350 F for 12 to 15 minutes. No longer than that.) – 4. Serve (Enjoy while it is hot straight from the oven with toasted baguette slices or water crackers.)

Bread idea for dipping…Place cubes of stale bread onto stripped rosemary sprigs, drizzle them with olive oil and a pinch of sea salt and lay them on a tray. Put in the oven to cook with the Camembert. Voilà!

An Italian Charcuterie Board would be very nice served alongside Baked Camembert. We have a cooler full of lovely meats plus Prosciutto, Prosciutto with Truffle and Fennel Salami to slice.

Farmstead’s Mountain Oak 3-year-old Gouda from New Hamburg, Ontario has a hard, flakey paste and some mineral crystal crunch. Rich and complex with flavours of butterscotch and hazelnut. Pair with Cabernet Sauvignon. Grand Campion at the 2017 British Empire Cheese Competition.

Douanier from Quebec 25% off

The aromas are earthy, milky, and rustic, while the flavors are creamy, mild, and reminiscent of green apples and nuts with aging. It has a line of ash running through the middle. Le Douanier won the Grand Champion award at the Canadian Cheese Grand Prix in 2004.
