Margot’s Summer Salads

Orzo Salad

  • Cook and drain orzo (Do not overcook the orzo)
  • Add Itaca Mandarin oil -or- Itaca Lemon oil
  •  Also add Boschi Limoncello vinegar
  • Add small amount of thinly sliced red onion,  fresh dill and Fresh Italian Parsley
  • Blend together and sprinkle with Maldon salt

Fennel Salad

  • Thinly slice fennel and a little  red onion.
  • Sprinkle with Maldon salt.
  • Drizzle Boschi Pomegranate Vinegar and Itaca Mandarin oil over it.
  •  Add sliced fresh oranges and Taggiasca Black Olives, optional.
  • Add fresh mint.

Cucumber Salad

  • Quarter small pieces of cucumber ( Margot uses the small Lebanese cucumbers.).
  • Sprinkle Maldon salt and let the cucumber drain in a sieve.
  • Drizzle Boschi Pomegranate Vinegar and Itaca Mandarin over it.
  • Add fresh mint.
  • Add red onion, fresh radish, red peppers and feta, optional.
