St-Augustin is an orange-tinted version of the Mont St-Benoît. A firm cheese that tastes like hazelnuts that is typical of Swiss cheese with one peculiarity: it is orange in colour. This cheese is aged for a minimum of 45 days.
It is a firm, rindless cheese with holes, a subtle aroma of Emmental and an almond and salted butter flavour. Enjoy it with fresh fruit, in salads, in quiches, omelettes and fondues. Pair with medium-bodied wines dominated by fruit aromas, possibly a Shiraz or Montepulciano d’Abruzzo.
