Kendal Vale: Commanda and Voyageur

Region: Ganaraska River Valley, Ontario
Milk: Sheep

A tribute to the life of the Algonquin elder William Commanda. Keeper of a number of Algonquin Wampun Belts. Ojigkwanong or “Morning Star” Grandfather Commanda received the Order of Canada in 2008 and continues to inspire. The fullness and complexity of this soft cheese is a reminder and a tribute to him and the circle, which was for him and us, the circle of life.

This two year old Blue has a nut and berry quality. These basic foods were often the food for voyageurs on their sometime two year journey from Montreal to the far west. This cheese is best served with a Port or fortified wine so often the fuel for many a journey to the West.
