Ti Kay La – A Taste of St. Lucia
In St. Lucian Creole, Ti Kay La means “the little house”, and for Chef Alexander, each recipe is a taste of home – that little house she remembers in her beautiful St. Lucia. Try her amazing selection of chutney, rub and sauces now found at Herma’s that will transport you to the island of St. Lucia.
Mango & St. Lucian Rum Barbecue Sauce starts off fruity, then hits you in the taste buds with wicked flavour.
Mocha Coco Barbecue Sauce is rich, tangy and vibrant with a smooth espresso and cocoa finish.
Spicy Roasted Mango & Tamarind Sauce has a sunshiny spicy sweet tropical tang with a smooth and savory caramelized fruit flavor.
Note: Tamarind, which is also in the Hot Tamarind & Ginger Chutney, is a pod of fruit grown in India, Asia and tropical climates like St. Lucia. These pods of fruit taste sweet and sour when ripe. An exciting addition to sauces and chutney.
Chef Victoria’s Pan Seared Ti Kay Ten Pepper Grilling Rub Salmon Recipe
2, 6 oz Wild Salmon Fillets, skin on
2 tbsp Ti Kay La Ten Pepper Grilling Rub
1 tbsp extra virgin cold pressed olive oil
2 tsp of avocado or melted coconut oil for greasing skillet
Wash the fish under cold running water and pat dry with a paper towel. Watch for any pin bones you may need to pull out.
On a plate mix Ti Kay La Ten Pepper Grilling Rub and oil to make a paste. Rub the spice paste all over the fish – both sides – until well coated.
Place large cast iron or non-stick skillet over medium-high heat. When pan is very hot pour in the 2 tsp of oil and put in the fish, skin side down.
Sear fish for about 3 minutes on each side, making sure that the fish has browned on both sides. Fish should be done in about 6-8 minutes. When the fish is nicely browned on both sides, remove from the frying pan and allow to rest for 2 to 3 minutes before serving.
Chef’s Tip – Make a big batch of this salmon to enjoy cold the next day, on a salad, mashed with mayo for a spicy sandwich, or mixed into scrambled eggs.
The Garlic Box’s Zesty Lemon Garlic Rosemary Roasted Potatoes Recipe
1 pound of baby potatoes – 1 1/2 tsp olive oil – 1 tbsp Lemon Garlic & Rosemary Poultry Rub from the Garlic Box – 1 tbsp finely minced fresh parsley leaves – 1 tsp maple syrup – salt and pepper to taste
Lemon Herb Olive Mixture
3 tbsp olive oil – zest of 1/2 lemon – 1 tsp finely minced fresh parsley leaves – 1 tsp Lemon Garlic & Rosemary Poultry Rub – salt and pepper to taste
1.Preheat oven to 350 F. Line a baking sheet with non stick baking paper. Set aside. Cut each baby potato in half.
2. In a large bowl, combine prepared potatoes with olive oil, Lemon Garlic and Rosemary Poultry Rub, parsley, garlic, maple syrup, salt and pepper. Toss to coat well.
3. Place potatoes, cut side up, on baking sheet and roast for 20-25 minutes.
4. Meanwhile, combine all ingredients for lemon herb olive oil in a small bowl.
5. After 25 minutes of roasting, baste potatoes with half of the lemon herb olive oil mixture, and then pop back into the oven and continue roasting for another 25 minutes or until the potatoes are cooked.
6. Once cooked, drizzle potatoes with remaining mixture and serve immediately. Sprinkle with more sea salt if necessary!

Lindsay Bandaged Goat Cheddar
This hand-crafted goat cheese made in small batches for 12 months near Lindsay, Ontario is wrapped in cheesecloth which helps to age as well as preserve its flavour.
It has a sweet, fruity slightly acidic beginning which afterwards gives way to light earthy notes, cooked milk, caramel, and a trace of tang. Enjoy with thinly sliced baguette and a glass of lager. Also nice with crisp apples, dried apricots, pistachios and a glass of Riesling.
Lindsay Bandaged Goat Cheddar has won numerous awards including second place for best in show at the American Cheese Society Awards, grand champion at the Royal Winter Fair, and first place at the British Empire Cheese Competition.
Also from Lenberg Farms is Thea (bandaged sheep cheddar) and Tania (Toscano Hard Ripened Sheep’s Milk Cheese).
Goat Cheese is easier to digest and heart healthy.
