Herma’s Cheese Shop

We have an amazing selection of cheese and charcuterie from which to choose. Janis will be in the Cheese Shop  Fridays and Saturdays to cut cheese specific to your liking. This also includes the cutting of Prosciutto DOP, Fennel Salami (Finocchiona) and Porchetta (fabulous Italian ham) which Herma would also be happy to cut. Lovely hand-wrapped cheeses and delicious packaged-salamis may be found in our coolers every day of the week.

Challerhocker, pronounced “holler hocker”, meaning “sitting in the cellar” is a Swiss cheese washed in brine and spices and then aged for a minimum of 12 months. Its initial aroma and flavour is a lovely concoction of roasted peanuts, melted leeks, brown butter, sweet cream and caramel. Made by cheesemaker Walter Rass, the lingering silky, salty finish of Challerhocker makes it an ideal cheese for the winter months.

The cheese pairs ideally with a glass of Pinot Noir, Chardonnay and Cider.

Storing and Caring for Cheese

Other Cheese Tips…

Never store cheeses together.

Store each cheese individually. Do not wrap different cheeses together as their flavours will combine, ruining the original flavour of each specific cheese.

Face Clean cheese at room temperature before re-wrapping.
When cheese has sat at room temperature it sweats and releases oil. Before wrapping and placing cheese back in the  refrigerator, wipe clean with non-serrated cheese knife, removing any debris or oil that may have developed.
Soft Cheese
Soft cheeses are easier and cleaner to cut when they are cold. Don’t wait for them to reach room temperature.
Hard Cheese
Harder cheeses, Parmigiano Reggiano and Aged Gouda, are easier to cut at room temperature. Let them warm up after leaving the refrigerator.

We would like to thank Zak for working so closely with us during the Christmas and Valentine’s Day season. We would also like to congratulate him on the opening of his new business in Cobourg. In addition to catering he will also be providing such services as providing a monthly dinner that may be picked up at his new location.
