We don’t know about you, but with all the cold rain, wind and snow we’ve been experiencing these past couple of weeks, we are needing a little pick-me-up right about now. A little pleasure shopping, products to pamper and delicious St. Lucian-inspired foods are just the ticket to get our head-space where it needs to be. This weekend why not treat yourself with a visit to Herma’s?

Traveling is a great way to escape winter, even if only done from the comfort of your own kitchen.

Let’s take a culinary trip to St. Lucia and Spain – two places that require us to relax and eat at a leisurely pace. You may want to break out some Reggae and Spanish guitar music to set the stage.

A Taste of St. Lucia

Chef Victoria of Ti Kay La, who grew up in St. Lucia, says that with just two rooms for her mother, father and thirteen siblings, she learned early on to savour the natural riches surrounding her family’s home – the azure sea that supplied fish and the hot West Indian sun that ripened avocado, plantain, peppers, and papaya which grew right at her doorstep. She says she puts her childhood memories and a little island sunshine into every sauce she makes – hand-made in small batches using all natural, authentic ingredients.

Senga’s Red Pepper PasteThis roasted-red pepper infused with tropical south eastern spices is perfect for shrimp or boneless skinless chicken thighs as seen in the picture.

Island-infused Barbecue Sauces

For an island-infused barbecue sauce try Ti Kay La’s Smoky Stout & Hickory BBQ Sauce, Mango & St. Lucian Rum BBQ Sauce or Mocha Coco BBQ Sauce. The latter has a tangy and vibrant flavor with smooth espresso and cocoa finish. We also carry Ti Kay La’s BBQ Spice Blend. Enjoy even when it is cold outside as these foods are just as nice prepared in your oven. Be sure to add mango or pineapple to your dish.

Paella Kit (Add tiger shrimp and Chorizo to the mix.) – Chorizo (Fry with a little garlic and red wine.) – Queso de Oveja with Black Garlic (cheese) – Manchego Curado (cheese) – Origen Jams (Pairs beautifully with cheese. Try Sweet Onion Jam, Hot Chili Pepper Jam, Wild Berries Jam or Red Pepper Jam.) –Queso de Cabra al Romero (a.k.a. Goat Cheese with RosemaryEnjoy this goat on a thin slice of baguette with Belazu’s Olive Tepenade.) – Quince Paste ( Pair with Manchego! Try skewering small cubes of Manchego and sandwich together on a toothpick with Quince Paste in the middle or place paste on a cheese board with spreading knife.)

Colston Bassett Stilton

Stilton is one of the most celebrated cheeses in England. It is so beautiful with blue veins that radiate from the center of the cheese. Fabulous on a cheese platter with walnuts and crackers and also as a nice ingredient to perk up everyday dishes. Pair with sherry or port wine.

Gruyere AOP 1655

The milk of this award-winning Gruyère AOP 1655 is produced from herds of Holsteins fed exclusively on grass from the Alpine region’s pastures. Only 18 to 20 wheels are created each day using a centuries old recipe. With flavours of browned butter and fresh cream followed by a nutty, tangy finish, it is considered to be delicious on a cheese platter, as a topper for French Onion Soup or Croque Monsieur and is delightful in a Fondue.

Berkswell Ewe’s Milk Cheese

This is an award-winning hard sheep’s milk cheese from England. Much like a Manchego, it would be ideal for any cheese platter and is delightful enjoyed with honey and quince paste. Also pairs well with a robust red like Shiraz.

Herma’s Signature Product Suggestion

Herma’s Chèvre

This lovely goat’s milk cheese and olive mixture is delicious by itself served on top of a crostini, however it is also used as an ingredient for everyday dishes as well. Toss in pasta, stuff in chicken breasts or use as a pizza topping. Also a nice addition for your Spanish night of tapas.

We at Herma’s all agree. In spite of the fact that we carry a large array of all sorts of crackers, not to mention Manoucher Baguette, Herma’s homemade crostini is without question our favourite vehicle for cheese. It will now be made in Herma’s very own kitchen every Friday. First come, first served.
