Spain’s most famous cheese – at Herma’s
Queso Manchego’s Viejo – one year old sheep’s milk cheese is a crumbly cheese with a sweet, lingering taste.
Queso Manchego’s Curado – 6 month old sheep’s milk cheese with a caramel, nutty, and distinctly acidic taste.
Excellent paired with Spain’s fruity wines.
Napoleon’s favorite goat cheese!
Valencay is a goat’s milk cheese from Berry, France that has a famously truncated pyramid shape and a taste that is mellow, yet savory and salty. Try on a cracker or slice of baguette bread.
Little bit of history…
It is said that Valençay cheese used to have the shape of a perfect pyramid. Unfortunately for the cheese, Napoleon returned to the castle of Valencay after his unsuccessful expedition in Egypt. When he saw the pyramid-shaped cheese, in a fit of rage, he drew his sword and cut off its top. Since then the cheese has always been made with a flattened top.
Pairs well with Sauvignon Blanc, Chardonnay or a Cabernet.
Something more local?
