Black Winter Truffles

Just one whiff of the intense aroma that comes from truffles will have you salivating for the rich flavours sourced from this sought-after, foraged, edible, subterranean fungus – a rare delicacy.

Using the Actual Truffle

Black Winter truffles have a strong presence so MUST BE USED SPARINGLY to flavour foods. The truffles should be cleaned before use by brushing or wiping (NOT rinsing underwater). Truffles should be added as a finishing touch at the end of cooked preparations. Prolonged periods of heat will diminish the truffle’s flavor.

Adding Truffles to Foods

Shaved – Grated – Slivered – Thinly Sliced

Add Truffles to cream-based sauces.

Fold Truffles into butter and spread over crusty bread sprinkled with salt.

Thinly slice or grate truffles over salads, pasta, risotto, soups, potatos and egg-based dishes.

Truffles, used very sparingly, add depth to pizzas, fries and roasts.

Stir into mashed potatoes, macaroni & cheese and casseroles.

Truffles may also be simmered with sugar and added while making homemade ice cream.

Truffle Pairings

Herbs – tarragon, basil, and parsley

Aromatics – garlic, shallots, and onions

Cheeses – goat, parmesan, fontina, chevre, and gouda

Sinfully delicious Riopelle de L’Isle is a buttery, melt-in-your-mouth triple cream cheese with a bloomy rind. Go ahead! Enjoy life to the fullest.

We recommend Mountainoak Gouda from Ontario. This full-flavoured, three-year old Gouda won the Grand Champion award at the 2017 British Empire Cheese Competition.

Fondue Recipe

Ingredients

4 cups (375 g) grated Gruyère cheese – 4 cups (375 g) grated Fribourgeois Vacherin cheese – 2 tbsp cornstarch – 1 clove garlic, halved – 1 cup (250 ml) dry white wine – 1 loaf Manoucher Baguette, cubed

Process

Combine the cheeses and cornstarch in a separate bowl. – Rub the inside of the Fondue pot with garlic and leave in pot. – Add cheese mixture and wine. – Heat over medium. – Melt the cheese mixture stirring constantly with a wooden spoon. – Place Pot over Fondue Pot Burner (if you have one). – Serve immediately with bread cubes.

Note: 1 tbsp of Kirsch is nice to add to the cheese after melted, however it does not appear to be available in Canada at present.
