Shropshire Blue

Shropshire Blue Cheese is an orange-coloured semi-firm blue cheese from England that looks lovely on a cheese platter. Similar to a Stilton, this blue is sharper and stronger, with a rich, creamy and smooth texture. Pair with Cabernet Sauvignon.

Raclette de Compton

Excited to offer this lovely Raclette from Quebec which is a farm organic cheese made from cow’s milk ripened for 60 to 90 days. It is a semi-soft cheese that is supple with great melting properties along with butter and chestnut flavours.

You have probably heard about using melted Raclette to pour over potatoes or to have a Raclette party grilling foods and scraping melted cheese on top of veggies and the like. I personally simply love Raclette poured over caramelized onion and crusty baguette. Yum!

Consider Grilled Cheese Croutons

Another idea for your Raclette? Try creating grilled cheese croutons for your soup. Create the grilled cheese sandwiches cooking both sides of buttered bread with cheese in middle about 4 minutes in skillet, both sides, until the bread is golden and the cheese is melted. Cut sandwiches into 1/2″x 1/2″ cubes and serve alongside and in a mild, brothy soup.

Baked Brie Recipe

using Gourmet Inspiration’s Prairie Berry Dessert Sauce

Ingredients

8 oz. round of Brie cheese (rind removed) – 4 tablespoons of brown sugar – 1 tablespoon of hot water – 1/4 cup of thinly sliced almonds – 1/2 baguette sliced thinly on an angle and toasted – Gourmet Inspirations Prairie Berry Dessert Sauce

Instructions

Place brie in small to medium sized baking dish sprayed with non-stick cooking spray or in Emile Henry’s Cheese Baker. Push down brie to form to the baking vessel.  – In a small mixing bowl combine brown sugar and hot water. Mix until smooth. Add almonds and mix together until evenly coated. – Pour evenly over brie. – Bake at 375 degrees in a preheated oven for 10 minutes or until cheese starts to melt. – While brie is cooking slice baguette, place on a baking sheet and toast in the oven at the same temperature for 8 – 10 minutes. – Remove brie and baguette and place onto serving platter. – Slather with Gourmet Inspirations Prairie Berry Dessert Sauce.

Try using Prairie Berry Dessert Sauce on waffles, French toast, cheesecake, ice cream, in crepes and mixed drinks.
