They were designed by Komin Yamada whose mandate was to develop a range of knives that was truly new and revolutionary, using the best materials available and the latest manufacturing techniques. The two most innovative features of Global knives are their edge and the way they are balanced. The majority of Global knives are sharpened or ground on both sides of the blade like western-style knives, however, their edges are ground straight to a point rather than beveled, resulting in a dramatically sharper knife which stays sharper longer.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. They are made from Yoshikin’s proprietary, high-carbon stainless steel.
The Knife Range
There are four series of Global knives: G, GS, GF and GSF.
The G and GS are lighter in weight to reduce muscle fatigue. They are constructed from three pieces, the stamped blade and two halves of the handle which are welded together. The GF series are made in a similar manner but with the addition of a collar. The GSF knives are a single piece of hand-forged steel without any welding. Only small knives are available in the GSF series.
Classic collection of large knives for general preparation and also for the more adventurous chef. This range includes the best selling knife – the G-2 20cm Cooks knife, as well as other ‘must-haves’ like the Bread knife and 16cm Boning knife.
The GS Series is a classic collection of small and medium-sized knives for general preparation. As well as small and medium sized Cook’s/Chef’s Knives, this range also includes more specialist items such as the GS-11 Flexible Utility Knife and the GS-9 Tomato Knife.
The GSF Series is made up of smaller knives with solid handles. Perfect for peeling, paring and chopping those smaller food items, the GSF range will have something for you.
The GF Series is a classic collection of larger, drop forged knives for general preparation. This range, being more durable for heavy use, is favoured by professional chefs.
