Fried Plantains Recipe

Plantains – An island favourite!

Fried ripe plantains have a crispy texture and irresistibly sweet, caramelized taste. It’s a very popular Caribbean dish that is served with almost every meal and will be sure to bring the taste of the Caribbean into your home.

Serve fried ripe plantains as a side dish or snack. Try enjoying alongside red beans or rice and Barbecued Chicken.

  • 2 ripe plantains
  • 2 to 3 tablespoons oil for frying
  • sea salt

Peel plantains by cutting off both ends and cutting a slit down the side of each plantain. It will come off in sections as it is not as easy to peel as an actual banana.

Slice the peeled plantains into 1/4″ thick slices diagonally, not straight down in rounds, as this provides more surface to allow caramelization.

Drizzle a little oil into a nonstick skillet to just fill the bottom of the pan. Place it on medium heat.

When the oil begins to simmer add plantains. Only put an amount that will fit in frying pan. Work in small batches. Fry for 1 1/2 minutes on one side, turn over and cook for 1 minute on the other side.

Remove plantains from the pan and let soak on paper towels.

Sprinkle lightly with sea salt for sweet and salty balance.

Pump up the reggae and use Ti Kay La’s Spicy Roasted Mango & Tamarind Sauce as a dip for these yummy island treats.
