June is the most amazing month. Beautiful weather, lush green grass, life abuzz with excitement everywhere we look. We think it’s the best time for picnics and grilling outdoors. Salt Spring Kitchen – Candied Jalapenos are back!

What is Burrata?

Created in Italy in the early 20th century, burrata originated as a way to use up extra curds left over after making mozzarella. A piece of regular mozzarella is formed into a pouch and is filled with a mixture of leftover curds and fresh cream. To seal up the mixture a knot is twisted on top.
Burrata is so creamy that the word literally means butter. When cut open, the creamy filling with a texture like runny ricotta oozes out, very similar to the experience of cutting into a poached egg.

Serving Suggestions…

A Caprese Salad

Place pieces of Burrata on top of tomato slices. Add basil leaves and drizzle with olive oil and balsamic vinegar. Season generously with salt and pepper.
Prosciutto and Burrata with Peas
Place two pieces of Burrata on top of 4 slices of Prosciutto. Top off with pea mixture involving fresh mint, lemon juice, olive oil and fresh Parmigiana Reggiano. The result? Refreshing flavours perfect for summer.

Swirl of Marinated Pasta Capped with Burrata
Cap off a swirl of marinated spaghetti with Burrata. Add cherry tomato and Parmigiana Reggiano for a perfect finish.
Burrata with Prosciutto-Wrapped Peaches
Place Prosciutto Wrapped and Grilled Peaches on a tray surrounding Burrata. Drizzle with Balsamic Vinegar and add a pinch of fresh basil and flakes of Malden Salt.

Isabella 2 Sisters

This Dutch cheese that balances rich and creamy with nutty and briny tastes of butterscotch and caramel. Pair with a full red, red Zinfandel or an Amber Ale.

Chateau de Bourgogne

The name of this very rich, creamy, buttery triple crème from Burgundy should proceed itself as we have mentioned it so many times. Enjoy with cherries or a fruit spread on crostini and a glass of Champagne.

St Marcellin

Hailing from the Rhone-Alpes region of France, Saint-Marcelin was made exclusively from goat’s milk until the 13th century (now primarily a cow’s milk cheese). The rind of this cheese is almost non-existent at room temperature, and once warmed, even the gentlest touch of a cracker will cause it to burst forth in a fountain of cream. That is why it is protected by a little terra cotta pot that may be lightly warmed in the oven. It has a mushroomy, nutty, fruity flavour. Try with baguette or your favourite crackers. Fresh, tart fruit pairs nicely with this cheese.
